I also love the classic FF games. I think sometimes you just have to stick it out and then you'll find yourself enjoying it more later on. That's what happened to me with Final Fantasy and the Four Heroes of Light on DS.

Dragon Quest also has a bunch of remakes on DS, and they're good too, although to be honest, I haven't played any of them.
Yes! The remakes of 3 and 4 on DS are great. They should absolutely do the same with 5 and 6 (although now they would be on 3DS).

I agree with you on Kirby, that game is one of the best in the series! I ate it up (get it?). The mech thing was awesome and the additional game with Meta Knight was really great too.
Gaps! Chip n' Dale Remastered sounds awesome! Although, to be honest, I haven't played the NES game, but I know it's good.
Wait a sec, you haven't played Shovel Knight??? You have not LIVED until you have played that game!!! Seriously, I'm not exaggerating, no price is too high for SK, probably the best indie game in the last five years.
