Sometimes I miss being able to turn on my SNES, pop in a game and play it right then and not have to wait for a dashboard to load, connect to the Internet, and then load the game's many company logos before I can play something.

Some of my favorite fighter series include the Soul Calibur games, Smash Bros. series, and Marvel vs. Capcom 1-3.

For the second part of the question, I think you're more qualified to answer that than I am, because you know way more about fighters than me!  But I'll give it a try anyway.

There are two ways that I think game developers can make fighters more accessible to people.  One is simpler controls.  When I first saw Street Fighter 2, I felt very intimidated by the controls.  Six buttons?!?  I only have five fingers.  And once I found out that in order to do special moves you had to move the joystick in certain directions and hit buttons at the same time, I knew that I would never be able to master it.  That's why my favorite fighters, like the ones listed above, have simpler controls.

The other thing I think can make fighters more accessible is a bit less tangible.  Don't make the games so darn hard!  Give the player multiple difficulty levels or reward them simply by playing and having fun, and encouraging them to try out all the characters.  Again, my favorite fighters listed above are adept at doing this without dumbing down the game too much for experts, I think.

Dissidia is one of my favorite PSP games, too.  You should get the 'sequel,' it is worth it for the extra characters (like Tifa and Kain).

You should also get Ys Seven as well.

The only thing about God Eater that interests me is the music was composed by Go Shiina, apparently.

And get Loco Roco 1 & 2!  You need some happy in your life.  Plus it's a good way to tell what goes on inside my head 24/7.

Some baseball video games can be fun.  I've enjoyed a few here and there.  Like the Mario Baseball games on GC and Wii.  They were made by Namco, who makes a long-running series of popular baseball games in Japan called Family Stadium (or Famista for short).  The very first Famista game was on the Famicom and brought over to the US NES as R.B.I. Baseball.

I made a game once, too.  On Wario Ware D.I.Y.  It was actually featured in one of Nintendo's contests.  My game was 'Feed a kitty.'  You had to tap the nutritious "Meow Power" food for the cat and not tap the "Fatty Cat" food.  If he ate the good food, the cat would get big muscles.  If he ate the other food, he'd get all fat.  My brother said it was a stupid game, but hey, it got featured!  Actually it was a stupid game.
