You won't find games like Baby Pac-Man and Jr. Pac-Man on the Pac-Man collection, because they were published by Midway and Namco doesn't like to acknowledge the Midway Pac-Man games. They only do so with Ms. Pac-Man because it makes money.
Pac-Man Championship Edition is one of my top favorite Pac-Man games.
Yeah I remember when they used to show those old cartoons on TV in the afternoons. Where I live there were even a couple of local shows that had live actions hosts and puppets (think Krusty the clown) that would introduce the cartoons. The two local ones I remember most were B.J. and Lester's Cartoon Clubhouse and Mr. Peppermint.
I think the person who created Woody Woodpecker is interesting, at least.

With the way NIntendo is handling classic games on the Switch (no Virtual Console), I'd keep your SNES games if I were you, if you can.
I played this game at PAX. I'm surprised I didn't get a press release about it coming out. I'll have to try and request a review code. I didn't really see it as a Metroid style game when I played it at PAX, though.
I hope the new game doesn't rely TOO much on you having to have already played Pokemon GO, as I never have downloaded that on my phone. Two reasons why: One, my phone is too old. And two, when i'm out and about, I don't like to have my nose buried in my phone. I like to be a little more aware of my surroundings. Especially since I've been blind in my left eye since birth and can't see as well around me. But the new game does look interesting. I hope I can check it out at E3!

DKC3 was a special game to me because it was one of the first games I reviewed for the newspaper. Isn't that crazy that's how long ago it was that I started reviewing games semi-professionally?
